Traditionally called a "Umidiera", which translates to "humidifier" it is a reference to the natural clay material of the pot and the way in which the shape of the pot acts when cooking. The terracotta qualities allow for the pot to gradually, spread heat uniformly and cook food slowly so that it stays moist and hot reducing the need to add oil and liquid. The terracotta is porous so heat and moisture circulate around the pot during cooking. The natural properities of the terracotta will keep the dish hotter for longer allowing you to serve your meals perfectly warm from the table.
